½ cup milk
1 cup flour
1 tsp. baking powder
1 cup sugar
splash of almond extract
½ teaspoon salt
3 tablespoons butter
1 quart pitted sweet cherries
¼ tsp. cinnamon
Mix all dry ingredients, except cinnamon, and then add milk to form a batter.
Melt the butter in 2 or 3 quart baking dish.
Pour the batter on top of the melted butter.
Heat the cherries in saucepan with ½ cup sugar.
Add the cinnamon and almond extract to cherries.
Now pour over the batter.
Bake about 35 minutes at 350 degrees.
Serve warm with milk, ice cream or your favorite topping.
Try substituting blueberries or peaches instead of cherries when each is in peak season.
